Dressing
Mary Jo Briggs' Dressing-Mary Eckert's Mother
1 large skillet cornbread, using 2 eggs, with half flour and half corn meal
Plus 1 little skillet of cornbread
2 c of onion, chopped
1 3/4 c celery
Broth-7 cups
5 teaspoons sage (I use 3 teaspoons poultry seasoning)
4 slices of light bread
1/2 tsp salt
2 eggs
Pepper

Line cake pan with chicken. Then cover with dressing.
Cook until brown at 30 degrees--about 30 min. or so.
Note: Mother and Edd were at our home on Riders Road and enjoyed Thanksgiving with us on 11/25/1987. Mother does not use recipes. As she determined the amount needed for the dressing, I would stop her and measure the ingredients in order to have a recipe for my use at a later time. Mary Eckert
