Calypso Bars (given to Connie Fowler in 1972)
1 1/2 Tablespoon cocoa + 2 Tablespoon butter or 2 1/2 oz. unsweeten Chocolate
2/3 c hot water
1/3 c sugar
1/3 c dates chopped
1 c butter
1 teaspoon vanilla
1 1/4 c brown sugar
1 1/2 cup of flour
1/2 teaspoon salt
1/2 teaspoon soda
1 1/2 c quick cooking oats
1 c chopped nuts
Melt chocolate in hot water over low heat. Add white sugar & stir until dissolved. Add dates & cook over low heat until mixture thickens-about 5 minutes. Add 1/4 cup of butter and then vanilla. Cool.
Cream remaining 3/4 cup butter & then brown sugar together until white & fluffy/ Sift dry ingredients together. Add to cream mixture. Beat well. Add nuts & cake mix until crumbly. Pour 1/2 of this mixture on to bottom of greased 13 x 9 x2 pan. Sprinkle chocolate mixture-top unto remaining nut mixture. Cook at 350 degrees for 30 minutes.
